The desire to experiment and discover every possible detail of Sangiovese has not stopped, on the contrary, it has undertaken a new path, still white, but this time with the addition of bubbles. A long and difficult journey, which found fulfillment in a sparkling wine where every piece, every single bubble, is in its place. The objective was precisely to put the native Tuscan variety in a new light, based on Tenuta Fertuna’s experience in working the vine in its white version.

Sangiovese vinified in white wine

After the selection of Sangiovese, harvested strictly by hand, we proceed with a soft pressing of the whole bunches to continue in a natural process of decanting, followed by alcoholic fermentation for the development of the 10 degrees of alcohol that form the base and structure of the wine that will make up the sparkling wine.
Fifty percent of the mass continues with a maturation in Allier barriques for 6 months Afterwards, it is blended and the second fermentation takes place.
Once the second fermentation has taken place, the sparkling wine rests on the lees for a minimum of 36 months before remouage and disgorging.
Dosage: 5 gr/l.e.

Golden straw yellow, fine and lively perlage

On the nose Fresh white flowers and delicate hints of white-fleshed fruit, light roasted tones in the background.
In the mouth freshness and good acidity surrounded by hints of honey and bread crust structured and elegant.
